I spent two separate days with Chin first doing a Bangkok market tour and then a full day seeing the floating markets and near Bangkok farms. As a chef from the US I can only say the best about this experience. Chin is an encyclopedia of knowledge of Thai cooking, ingredients and preparation. She will dig into this cuisine as far as you want to go and will show you anything you are interested in. This is the best experience I have had in Thailand and am planning a return trip now and will be spending 3 days with Chin cooking nonstop in her kitchen. You will have an incredible time.
Our trip to Thailand was scheduled with a tour company with two very specific requests, immerse us with people and help us understand culture. Redundant I know, but you can never be too specific. Our travel company selected Chin's Chili Paste Tour for my wife and I, with a simple warning, don't eat breakfast. Now, my wife and I pride ourselves on being experienced travelers and up for anything including eating. There is nothing like this. Let me just give you a brief synopsis: Chin picked us up at our hotel at 9:30am and we jumped in a taxi. In less then 10 mins we were out of the cab and eating duck with basil at a street stall. From there it was sweet rice noodles to Japanese pot stickers to sweet coconut balls of delight. Then it was two different kinds of chili with fried pork rinds to pork sausage rolls and pineapple. We moved on to catfish salad (amazing) and sweet beans to Tom yum and fried chicken. All this before 11:30. We then traveled on to see more food shops where we imbibed on another Tom Yum, seafood soup, sour fish organ soup and papaya. We ate ice cream and then traveled to another market to see flowers and spices only to have Chin get us to eat even more. Look, if you are looking to eat, this is an amazing way to do it. You will never need another food tour after you tried this one. But, what this synopsis missed was all the beautiful people experiences. Food for my wife and I is about expression of a people, best experienced alongside those who pride themselves on preparing it. My wife and I got to spend hours meeting, smiling, in a few cases eating with (out of the communal dish), with these people. Nothing can describe the feelings of gratitude we have for the smiles we shared. This is not just a tour or a mild experience, this is the magic of travel. The ability to spend a fleeting moment with total strangers sharing in their passion and being a part of something we forget to be a part of while we are so busy living our lives. Thanks Chin for the opportunity and the great facilitation with a smile. Absolutely one of the top ten travel experiences my wife and I have had. And to those thinking of traveling to Thailand. Make time to experience this, you will not regret it. It truly is one of a kind.
